This week for my Genius hour I spent all my time experimenting with some different breakfast recipes. The one that caught my eye the most has been trending on social media lately, and that's the folded tortilla stuffed with whatever toppings your heart desires. I decided to use the technique but make it into a fun and interesting breakfast food. I started with some scrambled eggs, and with some cooked onions, black pepper, and salt, pretty simple. After that was done, I decided to grill some turkey cold cuts to add a little more character to them. At that point it was pretty much just down to cutting some cheese, adding some sriracha, and folding the tortilla very carefully. Once the tortilla was folded, I threw some butter in a pan and made it nice and golden brown. It was absolutely delicious and also showed me that breakfast food really doesn't have to be too difficult to taste amazing. Below I provided two pictures to show the prep, and then the final product. I highly recommend everyone try this out. This then inspired me to try and make some lox bagels, which consist of smoked salmon, capers, cream cheese, and some cucumber, all inside of a toasted bagel and typically eaten as a breakfast food. Once I get my smoked salmon, that's next.
In terms of what's up for my final product, I have to continue finalizing my website. I've gotten to the point in terms of my research that I almost have too much information, and now it's just going to come down to putting it all together. Next week I plan on adding a bunch more recipes to the site, especially ones that I've tried out and are proven to be tasty. These next few weeks I'm going to be trying to really push my limits and cook some fun stuff. I want to try my hand at a beefsteak, tuna steak, the lox bagels, and some sort of fun pasta, not sure which recipe yet though.
